How to make Lemon Rice

Lemon Rice


Raw rice - 1 cup
Lemon - 2 medium sized
Salt - as required
Turmeric powder - 1/2 tsp
Red chilles – 2
Oil - 1½ Tblsp
Cut ginger - 1 tsp
Asafoetida - 1 tsp
Finely cut curry leaves - 1 Tblsp

For Seasoning

Mustard seeds - 1/2 tsp
Black gram dhal - 1 tsp
Bengal gram dhal - 1 tsp
Broken cashew nuts - 2 tsps

To Make Lemon Rice

Cook rice and allow it to cool in a broad basin. Add turmeric powder on top of rice when it is still hot.
Heat oil and fry the seasonings, add cut red chillies and fry for a minute.
Pour over cooled rice with enough salt.
Squeeze lemon juice and mix well by adding ginger and asafoetida.
Garnish with curry leaves.
