Raw rice - 1 cup
Milk - 250 ml
Fresh curd - 1/2 cup
Salt - as required
Green chillies – 8
Fresh cream - 1½ Tblsp
Butter - 50 gms
Finely cut ginger - 1 tsp
Asafoetida - 1 tsp
Finely cut coriander leaves - 1 Tblsp
Mustard seeds - 1/2 tsp
Bengal gram dhal - 1 tin
Black gram dhal - 1 tsp
Cook rice till it becomes soft. Drain water and allow it to cool.
Mash with pointer and add thick milk to that. Heat oil, Add the seasonings and fry till golden brown.
Add slit green chillies, fry for a minute and pour over the rice.
Add butter, salt, cream, ginger, asafoetida and mix well.
Mix curd one hour before serving. Garnish with cut coriander leaves.
Note: Grated carrots, diced cucumbers, raw mango, green or purple grapes can be added to suit one’s taste.
